Homemade Vanilla Bean Ice Cream Recipe

- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- Pinch of salt
- 1 vanilla bean, split lengthwise
- 6 large egg yolks
- 1 teaspoon pure vanilla extract
In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, and a pinch of salt. Heat the mixture over medium heat, stirring occasionally, until the sugar has dissolved.
Scrape the seeds from the vanilla bean and add them to the saucepan, along with the pod. Bring the mixture to a simmer, then remove from heat and let it steep for 30 minutes.
In a medium mixing bowl, whisk together the egg yolks until they become light and fluffy.
Slowly pour the hot cream mixture into the bowl with the egg yolks, whisking constantly.
Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.
Remove the vanilla bean pod and strain the mixture through a fine-mesh sieve into a large bowl.
Stir in the pure vanilla extract and let the mixture cool to room temperature.
Cover the bowl with plastic wrap and chill in the refrigerator for at least 4 hours or overnight.
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
Transfer the ice cream to a container and freeze until firm, about 4 hours or overnight.
